	House Manager/Chef & Housekeeper sought for families weekend residence, 45 minutes from London, set in 50 acres of formal gardens and parklands. In addition to the manor house there are two cottages (one for head gardener, one for additional guests), stable block (converted to the staff accommodation), swimming pool and tennis court. The household is traditional but relatively informal in style. A smart, but casual uniform will be provided. Candidates must be completely flexible, have good stamina, and understand changing time-tables and in-house arrangements. You must show initiative and be able to anticipate the needs of the employer, and have great style in managing a house. Weekends often happen on very short notice and guest numbers are very changeable. The couple have two children 5 & 2 with older children around for occasional weekends also. Weekends vary from very family/children orientated to more formal adult weekends. Family weekends will involve multiple meal times whilst adult weekends will require more ?dinner party' style cooking. The chef/cook ideally would have some formal training with an understanding and care for dietary requirements. Baking of cakes, breads, pastries would be an advantage. In an ideal situation it would be great to find someone with a diverse cooking repertoire. Taking inspirations from restaurants/cook books such as The River Cafe, Moro, Ottolenghi and the like. On occasions sunday lunch and midweek dinner parties will occur at the clients London residence which you will be expected to cater and serve. The ideal person will have worked to a high standard in a similar landscape and be diligent, enthusiastic and motivated. The Senior Gardener will work closely with the Head Gardener and will be involved in all horticultural duties throughout the garden. He/she will be expected to show initiative, contribute to the day to day running of the garden, and be able to take responsibility for running of the garden when the Head Gardener is away. There are several other staff on the Estate and the ideal candidate should be able to work well as part of a small team whilst being able to work on their own for lengthy periods. He/she will be expected to work some weekends as part of a rota. The candidate should be able to operate and maintain both rotary and cylinder mowers, have good plant knowledge, be able to recognise pests and diseases, and be able maintain glasshouse plants. The candidate should also be proficient in the pruning and training of roses, wall shrubs and fruit trees. The gardens contain of mixed borders, shrubberies, woodland areas and a glasshouse and so the ideal person would have worked closely with plants associated with these kinds of areas before. The candidate should be qualified to spray, and possess PA1 and PA6 spraying certificates and preferably be certified in the use of a chainsaw. As with much Estate work he/she should be able to operate tractors and associated machinery.
